Eagle’s Plum Berry Crisp

Looking for a yummy way to end your summer? Here’s our plum of a dessert!

Plum Berry Crisp

Serves 6

Filling:

1 1/2 lb purple plums, cut into 1/2 inch wedges

1 cup blueberries (5 oz)

1 cup blackberries (5 oz)

1/3 to 1/2 cup packed light brown sugar (depending on sweetness of fruit)

1 tsp vanilla extract

1/2 teaspoon cinnamon

Topping:

Note – We like lots of topping, so we doubled the original amount!

2 cups rolls oats

1/2 cup all purpose flour

2/3 cup packed light brown sugar

1 stick lightly salted butter

Preheat oven to 425 degrees with rack in upper third. Toss together all filling ingredients in a 2-quart shallow baking dish and bake 10 minutes. Meanwhile, lightly pulse topping ingredients in food processor until butter is evenly distributed and mixture is crumbly. Remove baking dish from oven, stir fruit filling, then sprinkle oat mixture over it and bake until topping is crisp and golden and fruit is bubbling, about 35-40 minutes. Serve warm with fresh vanilla soft-serve ice cream.
