Helen\u2019s Pumpkin Chiffon Pie<\/strong><\/p>\n

\"Pumpkin<\/a><\/p>\n

Ingredients:
\n1 baked Pie shell (9 inch)
\n1 envelope plain gelatin
\n\u00bc cup cold water
\n1 \u00bd cups canned or home cooked pumpkin
\n1 cup brown sugar
\n3 large or extra large eggs, separated
\n1 tsp cinnamon
\n\u00bd tsp allspice
\n\u00bd tsp salt
\n2 T granulated sugar
\nVery little bit of grated orange rind (about \u00bd tsp or a little less)
\n\u00bd cup heavy cream<\/p>\n

Soften gelatin in cold water.
\nCombine pumpkin, brown sugar, egg yolks, spices and salt in top of double boiler.
\nCook over hot, not boiling water until thickened, stirring constantly.
\nAdd softened gelatin to hot pumpkin mixture and stir until thoroughly dissolved.
\nRemove from hot water and chill in fridge until mixture begins to thicken.
\nWhile mixture is chilling, beat egg whites until stiff, but not dry.
\nBeat granulated sugar into egg whites.
\nFold egg whites into cooled pumpkin mixture. Add orange rind and fold in.
\nWhip cream and fold into pumpkin mixture.
\nPour into baked pie shell. Using a frosting spreader, smooth and with a counter-clockwise circular motion, swirl the top of the pie. Chill.
\nWhen ready to serve, top with additional whipped cream or leave plain and serve each slice with a dollop of whipped cream.<\/p>\n","protected":false},"excerpt":{"rendered":"
