{"id":699,"date":"2018-03-22T10:15:39","date_gmt":"2018-03-22T14:15:39","guid":{"rendered":"https:\/\/www.eagle-inspections.com\/blog\/?p=699"},"modified":"2024-04-12T13:09:19","modified_gmt":"2024-04-12T17:09:19","slug":"mary-ellens-pioneer-bread-pudding","status":"publish","type":"post","link":"https:\/\/www.eagle-inspections.com\/blog\/mary-ellens-pioneer-bread-pudding\/","title":{"rendered":"Mom&#8217;s Pioneer Bread Pudding"},"content":{"rendered":"<p><a href=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2018\/03\/Bread-Pudding-2-cropped.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-701 size-medium\" src=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2018\/03\/Bread-Pudding-2-cropped-e1712941722929-251x300.jpg\" alt=\"\" width=\"251\" height=\"300\" srcset=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2018\/03\/Bread-Pudding-2-cropped-e1712941722929-251x300.jpg 251w, https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2018\/03\/Bread-Pudding-2-cropped-e1712941722929.jpg 480w\" sizes=\"(max-width: 251px) 100vw, 251px\" \/><\/a><\/p>\n<p>Pioneer Bread Pudding<\/p>\n<p>Ingredients:<\/p>\n<p>4 slices good quality white bread (I like Arnold Country\u00a0 White or something similar)<\/p>\n<p>2 cups whole or 2% milk<\/p>\n<p>3 T butter<\/p>\n<p>1\/4 cup sugar<\/p>\n<p>2 extra large\u00a0eggs<\/p>\n<p>Dash salt\u00a0(If you use unsalted butter, add a little extra salt\u00a0 &#8211; about 1\/4 tsp instead of a dash)<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>Nutmeg<\/p>\n<p>Golden raisins (You can use regular if you don&#8217;t have golden, but it looks nicer with the golden raisins.)<\/p>\n<p>Very lightly toast bread. Let cool and then\u00a0cut into small cubes (about 1 inch in size).<\/p>\n<p>Butter a round French Corningware 1 1\/2 quart\u00a0casserole dish or something similar in size. Put bread cubes in dish.<\/p>\n<p>Put two cups of milk, 3 tablespoons of butter\u00a0and 1\/4 cup sugar in saucepan.<\/p>\n<p>On medium heat, scald milk w\/butter and sugar. This means that you bring it almost to a boil, but not quite and then you take it off and let it cool.\u00a0Make sure you stir the sugar into the milk so that it&#8217;s dissolved and stir a little while the milk is heating\u00a0because you don&#8217;t want the sugar to sit on the bottom and burn!<\/p>\n<p>While milk is heating, boil a kettle of water.<\/p>\n<p>Beat two eggs slightly with salt and vanilla in mixing bowl.<\/p>\n<p>Take your scalded milk which has now cooled off a little and SLOWLY add milk, a little at a time, to the eggs. Whisk while you are doing this because you don&#8217;t want to cook the eggs.<\/p>\n<p>Pour this mixture over the bread cubes and add a scant handful of golden raisins. Push them down a little and then sprinkle a little nutmeg over the top. Don&#8217;t use too much because nutmeg can be overpowering. Just a light dusting over the whole top. Freshly grated is always best!<\/p>\n<p>Place Corningware dish in a large rectangular or square baking dish. A metal lasagna pan works great. Pour the boiling water in the pan around the Corningware dish until it&#8217;s a couple inches deep.<\/p>\n<p>Carefully place this into a 350 degree oven and bake for one hour.
