She&#8217;s celebrating by sharing her recipe for Oatmeal Chocolate Chip Cookies. Enjoy!<\/p>\n<p><strong>Mary Ellen\u2019s Oatmeal Chocolate Chip Cookies<\/strong><\/p>\n<p>Modified from a recipe found on PreppyKitchen.com.<\/p>\n<p>Makes 2 dozen.<\/p>\n<p><em>Ingredients:<\/em><\/p>\n<p>\u00bc cup whole wheat flour<\/p>\n<p>\u00be cup all-purpose flour<\/p>\n<p>\u00bd tsp baking soda<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>\u00bd cup unsalted butter, room temperature<\/p>\n<p>1\/3 cup granulated sugar<\/p>\n<p>2\/3 cup light brown sugar, packed<\/p>\n<p>2 tsp pure vanilla extract<\/p>\n<p>1 large egg<\/p>\n<p>1 \u00bd cups rolled oats (I use Quick Cook oats)<\/p>\n<p>1 cup Ghirardelli bittersweet chocolate chips<\/p>\n<p><em>Instructions:<\/em><\/p>\n<p>In a medium bowl, whisk together the flour and baking soda. Set aside.<\/p>\n<p>In a food processor or with a mixer, combine the butter with both sugars. Beat or process until light and fluffy.<\/p>\n<p>Reduce speed to low. Add the salt, vanilla and egg. Beat until well mixed, about 1 minute.<\/p>\n<p>Add flour mixture. Mix until almost combined.<\/p>\n<p>If using a food processor, add the oats and pulse until combined. Return to medium bowl and mix in the chocolate chips.<\/p>\n<p>If using a mixer, mix the chocolate chips in by hand.<\/p>\n<p>If dough is too soft, chill for about \u00bd hour in the fridge.<\/p>\n<p>Preheat oven to 375 degrees.<\/p>\n<p>Line two baking sheets with parchment paper.<\/p>\n<p>Use a 2 Tablespoon cookie scooper to drop heaping tablespoon-size balls of dough about 2 inches apart.<\/p>\n<p>Flatten each ball of dough slightly.<\/p>\n<p>Bake until cookies are golden around the edges, but still soft in the center. Depending on your oven, that could be anywhere from 8 to 12 minutes.<\/p>\n<p>Remove from oven and let cool on baking sheet 1-2 minutes.
