{"id":1856,"date":"2024-02-06T10:59:17","date_gmt":"2024-02-06T15:59:17","guid":{"rendered":"https:\/\/www.eagle-inspections.com\/blog\/?p=1856"},"modified":"2024-02-06T10:59:17","modified_gmt":"2024-02-06T15:59:17","slug":"mary-ellens-cream-of-mushroom-soup","status":"publish","type":"post","link":"https:\/\/www.eagle-inspections.com\/blog\/mary-ellens-cream-of-mushroom-soup\/","title":{"rendered":"Mary Ellen&#8217;s Cream of Mushroom Soup"},"content":{"rendered":"<p><a href=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2024\/02\/IMG_7462-rotated.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-1857\" src=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2024\/02\/IMG_7462-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2024\/02\/IMG_7462-225x300.jpg 225w, https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2024\/02\/IMG_7462-rotated.jpg 240w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>Warning: This soup is lick the bowl scrumptious!<\/p>\n<p><strong>Mary Ellen\u2019s Cream of Mushroom Soup<\/strong><\/p>\n<p>Serves 6<\/p>\n<p>Ingredients:<\/p>\n<p>4 T butter<\/p>\n<p>1 T olive oil<\/p>\n<p>2 medium onions, diced<\/p>\n<p>4 cloves garlic, minced<\/p>\n<p>1 \u00bd lbs fresh white or brown mushrooms, sliced<\/p>\n<p>2 tsp fresh chopped thyme<\/p>\n<p>1 T fresh chopped parsley<\/p>\n<p>\u00bd cup Marsala wine (I prefer Cribari)<\/p>\n<p>6 T all-purpose flour<\/p>\n<p>4 cups low sodium chicken stock<\/p>\n<p>1-2 tsp salt, adjust to taste<\/p>\n<p>\u00bd-1 tsp black cracked pepper, adjust to taste<\/p>\n<p>2 beef bouillon cubes, crumbled (I prefer Herb-ox)<\/p>\n<p>1 cup half and half<\/p>\n<p>1 bay leaf<\/p>\n<p>Extra fresh parsley for garnish<\/p>\n<p>Instructions:<\/p>\n<p>Heat butter and oil in large pot over medium-high heat until melted. Saut\u00e9 onion for 2 to 3 minutes until softened. Add garlic and cook until fragrant, about 1 minute.<\/p>\n<p>Add mushrooms with thyme and parsley. Cook for 5 minutes. Pour in wine and cook for 3 minutes.<\/p>\n<p>Sprinkle mushrooms with flour, mix well and cook for 2 minutes. Add stock, mix again and bring to a boil. Reduce heat to low-medium heat. Add salt, pepper, bay leaf and crumbled bouillon cubes.<\/p>\n<p>Partially cover and allow to simmer for 10-15 minutes, while occasionally stirring, until thickened.<\/p>\n<p>Reduce heat to low, stir in half and half. Allow to gently simmer \u2013 do NOT boil. If needed, adjust salt and pepper to your taste.<\/p>\n<p>Serve warm garnished with a little fresh parsley.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Warning: This soup is lick the bowl scrumptious!
