{"id":1566,"date":"2021-10-29T11:33:49","date_gmt":"2021-10-29T15:33:49","guid":{"rendered":"https:\/\/www.eagle-inspections.com\/blog\/?p=1566"},"modified":"2021-10-29T11:33:49","modified_gmt":"2021-10-29T15:33:49","slug":"mary-ellens-sour-cream-pumpkin-muffins","status":"publish","type":"post","link":"https:\/\/www.eagle-inspections.com\/blog\/mary-ellens-sour-cream-pumpkin-muffins\/","title":{"rendered":"Mary Ellen&#8217;s Sour Cream Pumpkin Muffins"},"content":{"rendered":"<p><a href=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2021\/10\/Sour-cream-pumpkin-muffin-2-rev.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-1568\" src=\"https:\/\/www.eagle-inspections.com\/blog\/wp-content\/uploads\/2021\/10\/Sour-cream-pumpkin-muffin-2-rev.jpg\" alt=\"\" width=\"240\" height=\"235\" \/><\/a><\/p>\n<p><strong>Mary Ellen\u2019s Sour Cream Pumpkin Muffins<\/strong><\/p>\n<p>Makes 10 standard or 8 large muffins<\/p>\n<p>Ingredients:<\/p>\n<p>\u00be cup all-purpose flour<\/p>\n<p>\u00bc cup whole wheat flour<\/p>\n<p>\u00bd tsp baking powder<\/p>\n<p>\u00bd tsp baking soda<\/p>\n<p>\u00bd tsp ground cinnamon<\/p>\n<p>\u00bc tsp ground ginger<\/p>\n<p>1\/8 tsp nutmeg<\/p>\n<p>\u00bc tsp fine sea salt (regular salt is okay)<\/p>\n<p>\u00bc cup unsalted butter, melted and slightly cooled (so it doesn\u2019t curdle the egg)<\/p>\n<p>1\/3 cup plus 2 T light brown sugar<\/p>\n<p>Set aside another 2 T brown sugar for sprinkling on top of the muffins<\/p>\n<p>1 tsp pure vanilla extract<\/p>\n<p>\u00be cup pure pumpkin puree<\/p>\n<p>\u00bd cup sour cream<\/p>\n<p>1 large or extra large egg (lightly beaten)<\/p>\n<p>2 T pepitas<\/p>\n<p>Instructions:<\/p>\n<ol>\n<li>Preheat oven to 350 degrees. Grease your muffin tin or line with paper baking cups.<\/li>\n<li>In a large bowl, whisk together the flours, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.<\/li>\n<li>In a second bowl, whisk together the melted butter and brown sugar (except for the 2 T you\u2019ve set aside). Combine well. Stir in the vanilla extract, pumpkin puree and sour cream. Stir in the lightly beaten egg.<\/li>\n<li>Add the flour mixture to the wet ingredients and stir until just combined. If you stir this too much, the muffins will come out too dense.<\/li>\n<li>Spoon the batter into the prepared muffin tin, filling each about 2\/3 of the way. Sprinkle some pepitas and brown sugar on top.<\/li>\n<li>Bake standard muffins for about 20 minutes and larger muffins for about 25 minutes or until a toothpick or cake tester comes out nice and clean when inserted into the center of a muffin.<\/li>\n<li>Let muffins cool on a wire rack for 10 minutes.
